DESCRIPTION:


Grilled egg yolk is one of the most challenging techniques in Etxebarri. The result is an egg full of flavour and enriched with oak wood smoke.

 

Joselito Chichas are already seasoned with paprika, garlic and salt and are used as the base for this magnificent dish in which the flavours of the egg yolk, the Chichas and the black truffle are perfectly blended to create a glorious explosion of flavour.

 

The Chichas are first cooked on a very low grill, very close to the fire and with a flame that is stoked by their own fat.

 

We then separate the yolks and place them in the special device designed to grill them, where they must be constantly turned so that they are perfectly and evenly cooked. To finish the dish, the yolk is served atop the Joselito Chichas and, before serving, we add a pinch of salt and grate a generous amount of black truffle on top.
