DESCRIPTION:


Marzuelo is an elusive and unusual mushroom, very succulent and slightly bitter, with no aroma when harvested, but with an intense flavour when cooked. Combining it with Joselito Pork Morro we discover an interesting and balanced fusion of textures and flavours.

 

Joselito pork Moro is obtained from the animal's face. It is cooked for about 4 hours in the wood-fired oven.

 

Once cooked, the morros acquire their characteristic gelatinous texture. They are then sliced and cooked on the grill, very close to the embers, until they reach perfection.

 

Then the marzuelos are cut into pieces and grilled with plenty of olive oil.

 

The Morro and Marzuelos are served on a plate, topped with a mustard flower from Etxebarri's own vegetable garden.
