DESCRIPTION:


This dish can probably be considered a "new classic" in Etxebarri. The combination of the elvers with the flavour and silky texture of the Joselito Pork Fat provides an extraordinary organoleptic experience, worthy of the best grill in the world.

 

The elver is the most delicate product of all those that pass through the Etxebarri embers and, in order to serve them at their best, it was necessary to build a vivarium in the restaurant itself in which to keep them alive until they are ready to be cooked.

 

In this new rendition of the classic recipe, the elvers are combined with the fat from Joselito pork, which provides a series of aromas that envelop the elvers in a harmony that is difficult to describe.

 

First, the fat of the Joselito Supernatural chop is chopped very finely and then texturised on the grill, until it acquires a consistency similar to that of a purée.

 

We then cook the elvers on the grill, drizzling them in plenty of olive oil and stirring them constantly.

 

To finish, we serve the elvers on a base created by the pork fat.
