DESCRIPTION:
The combination of espardeñas with Joselito Oreja is both surprising and successful. They are two products with very similar textures and complementary flavours, which go perfectly together and are a pleasing experience for the palate.
The first thing to do is to gently simmer the Joselito Oreja for 3 or 4 hours.
When the Oreja is well cooked, it is cut into very even rectangular strips and grilled until it is cooked to perfection.
The espardeñas are then cooked on the grill, very close to the fire and with a very hot flame, so that they cook at a very high temperature so that they are tender and crispy at the same time.
The end result is a dish with two textures that are surprisingly similar and flavours that combine perfectly.
