Always hidden among wood, fires, embers and aromatic smoke, Bittor Arginzoniz is the chef and owner of Asador Etxebarri. Awarded 3rd place at the last 50 Best gala, as well as 1 Michelin star and 3 Repsol suns, this self-taught Basque chef, committed to his cuisine and his philosophy, is recognised by the entire world of gastronomy as the best grill chef on the planet.

Arginzoniz is also considered one of the most demanding chefs in the world with regard to the quality of the products he uses. The best Galician beef, fresh fish from the Cantabrian Sea, shellfish from the Mediterranean Sea, vegetables from their own garden... and of course Joselito ham. His obsession for quality and his perfectionism means that he oversees every last detail of all the products that pass through his kitchen, to the point of bringing over three buffaloes from Italy so that he can milk them himself every day and make his own daily Burrata.

Arginzoniz took over at Etxebarri in 1990. 31 years later, it is one of the best known restaurants in the world, thanks to its honest and transparent style of cooking. A grill that glorifies the qualities of the best products on the planet and presents them as they are, without frills.

Bittor Arginzoniz nació en Axpe, en el valle de Atxondo, y allí ha vivido toda su vida. Cocinero autodidacta, nunca ha acudido a una escuela de cocina ni ha cocinado en otro restaurante, gracias a su curiosidad innata y su absoluta pasión por la parrilla ha conseguido desgranar progresivamente todos los secretos del fuego hasta dominar este caprichoso elemento mejor que nadie en el Mundo.
