Watermelon ham


¼ watermelon

PM olive oil, fleur de sel

 

Chorizo oil


100g grape pips oil 

100g chorizo 

 

Finish and assembly


1/2 black lemon

Watermelon ham


Season the watermelon with fleur de sel and olive oil then put it in a vacuum bag for 12 hours. Remove the watermelon from the bag and make it dry on the oven at 90°C for 5 to 6 hours.

Leave it to cool at ambient temperature. 


Chorizo oil

Cut some chorizo slices then place them in a pan with the oil. Simmer and remove from fire. Cover and let it brew. 


Finish and assembly


 Cut fine slices of watermelon ham the put them in the center of a plate, glaze with chorizo oil and lemon juice. Season with fleur de sel.
