DESCRIPTION:
One of Etxebarri's most iconic creations, full of flavour and family tradition.
This is a reinterpretation of Joselito chorizo based on the chorizo recipe that used to be made in the traditional way in the Atxondo valley farmhouses. It is made entirely by the Etxebarri team using Joselito Presa and Secreto and adding a significant new ingredient, the Gernika choricero pepper, which replaces the paprika.
After making a paste from the flesh of the chorizo peppers, the Joselito Presa and Secreto are finely chopped, in equal parts, and everything is mixed thoroughly, leaving it to rest for 24 hours in the cold room.
It is then stuffed into natural sausage skin and cured for a few weeks, depending on the weather and the desired taste.
