Braided pork shoulder and garlic chives (To bring out the flavour of the Japanese pepper)

Ingredients:

 

 

Braided pork  shoulder
   

-Pork shoulder
-Garlic chives
    

Sauce
   

-Mirin 50g
-Japanese saké 50g
-Sugar 70g
-Dark soy sauce 180g
-Tamari soy sauce 5g
    

Japanese pepper powder
    

Wasabi
    

Grilled eggplant
   

-Small eggplant
-Fried ham powder
    

Wasabi
    

Ginger

 



PREPARATION:

 

1. Sauté the small eggplant, peel  the skin, and  immerse. Sprinkle with powdered fried ham.

2. Boil the garlic chives

3. Cut the pork shoulder into long, thin strips, and  braid together with the garlic chives.

4. Place the pork  shoulder on  skewers, and  roast while  basting with the sauce.

5. Transfer the pork shoulder to a plate.

6. Decorate with (1), and top with grated wasabi and  ginger.
