In Bittor Arginzoniz's own words: “The Joselito Supernatural Pork Chop is an exceptional and undiscovered delicacy, with a unique flavour and an amazing tenderness. Pure acorn.”

 

It is a Joselito pork chop cured for 60 days in the natural drying sheds where Joselito hams and sausages mature. This gives it unique nutritional and organoleptic properties.

 

The chop requires a very simple preparation. After cutting it and removing the unwanted fat, which will be used in other preparations, we place it on the grill very close to the coals and sprinkle the top side with salt.

 

We arrange the spring onions among the embers so that they cook at the same time as the chop.

 

When the chop begins to heat up, some fat will fall on the coals, which will stoke the flame, so we must watch and correct the height of the grill to ensure that they are cooked to the desired point without burning.

 

Once it is cooked, we turn it over, add salt again and let it cook just enough to brown the underside without overcooking the inside.

 

Cut the chop into thin slices and present it with a braised onion.
