STEAMED BLACK RICE PIZZA WITH HAZELNUT CREAM, PARSNIP TIPS, SMOKED SCAMORZA CHEESE AND PAPADA JOSELITO

Accompany a slice of steamed black rice pizza with hazelnut cream (toasted almonds pacotised in cream with water and emulsified with oil, a very small amount of smoked oil, salt, a little water, a very small amount of lemon juice and sugar if required).
Cover the boiled and sautéed parsnip tips with oil and salt and decorate with 2 sliced of smoked provola cheese. Steam for two minutes and decorate with a thin slice of papada. Grind a little Sarawak black pepper and dress with a few drops of sauce made from the boiled parsnip tips blended with a little fino oil and salt.
