1. REMOVE EXCESS FAT FROM THE HAM AND CUT INTO IRREGULAR 1 CM PIECES.

2. COVER THE HAM WITH 2 L OF WATER AND SIMMER FOR 30 MINUTES, REGULARLY SKIMMING FAT AND FOAM FROM THE SURFACE.

3. LET REST OFF THE HEAT FOR 15 MINUTES.

4. STRAIN THROUGH A CLOTH, TAKING CARE NOT TO CLOUD THE SOUP, AND SKIM THE FAT FROM THE RESULTANT CONSOMME.

5. STORE IN THE REFRIGERATOR.
