DESCRIPTION:


The Joselito Sirloin Tataki is outstanding for the incredible texture of the meat, crispy on the outside and practically raw on the inside, which, accompanied by the vegetables and the sauce, offers a tasty and refreshing bite.

 

To prepare the sirloin for Tataki, vine twigs are added to the usual embers. The vine twigs adds a new aroma to the smoking process and also create a very powerful flame, which is needed to cook the outside of the sirloin quickly.

 

The sirloin must be constantly turning over the vine twig flame and when it reaches the desired point, it is quickly removed from the fire and placed in a container with water and ice to immediately stop the cooking inside the meat.

 

The result is meat with an unrivalled tenderness and juiciness. This must be cut into very fine pieces to which the sauce and seasonal vegetables are added.
