An exquisite consommé in which the intense flavour of the Joselito ribs is complemented by the smoky aroma of the Etxebarri grill.
The dish is both simple and surprisingly tasty. The Joselito ribs are grilled over a very high flame to enhance their aroma and flavour.
They are then placed in a pan with water in which the stock is reduced over a low heat, without haste. Finally, the broth should be strained before serving to extract the very essence of this consommé with a marked Joselito flavour.
