1. Chop the peeled potatoes and boil them in plenty of water for 30 minutes.
2. Once cooked, drain and pass them through a food mill or sieve.
3. Place in a saucepan and add the cream little by little. Add the Joselito oil.
4. Add salt.
5. Serve with shaved, diced or crispy Joselito ham.
