Jonnie (1965, Giethoorn, Netherlands) has being trying to dignify local products for more than 30 years, although, now days it has become a global trend, for him it has being his habit since he started cooking, everyday, he goes to the wild to pick and collect flowers, plants or mushrooms. Some days even, he uses the boat to search for the best local ingredients around him.
Nature is an important influence in Jonnie's cuisine. He finds it, as source of inspiration to develop new recipes and cooking methods. Moreover, he is perfectionist, shown in the presentation of his dishes.
Jonnie, has an impecabble record proven by his passionate cooking and his intelligent and meaningful, challenges to the diner. Thus, together with his wife Thérèse and an outstanding team, de Librije, maintains 3 Michelin Starts since 2004.
In 1993 Jonnie and Thérèse took over de librije together. Shortly after this they got their first michelin star. In 1999 the second michelin star followed and Jonnie became the youngest twostar chef in the Netherlands.
