1. REMOVE EXCESS FAT FROM THE HAM AND CUT INTO IRREGULAR 1 CM PIECES.


2. COVER THE HAM WITH 2 L OF WATER AND SIMMER FOR 30 MINUTES, REGULARLY SKIMMING FAT AND FOAM FROM THE SURFACE.


3. LET REST OFF THE HEAT FOR 15 MINUTES.


4. STRAIN THROUGH A CLOTH, TAKING CARE NOT TO CLOUD THE SOUP, AND SKIM THE FAT FROM THE RESULTANT CONSOMME.


5. STORE IN THE REFRIGERATOR.

1. ONCE YOU HAVE STRAINED THE FIRST CONSOMME, COVER THE HAM BONES ONCE MORE WITH WATER (2 L) AND SIMMER FOR 2 HOURS, REGULARLY SKIMMING FAT AND FOAM FROM THE SURFACE.


2. STRAIN THROUGH A FINE SIEVE, TAKING CARE NOT TO CLOUD THE SOUP, AND SKIM THE FAT FROM THE SURFACE.


3. FILTER THROUGH KITCHEN PAPER UNTIL YOU HAVE AN EVEN CLEARER AND CLEANER CONSOMME.


4. STORE IN THE REFRIGERATOR.
